Here’s a little known fact about me: I love breakfast. I mean, I love breakfast so much that I find myself lying in bed at night imagining what I’ll have for my first meal of the day and quite honestly, catch myself getting excited about it.
I’m not embarrassed and no, I am not ashamed. I proudly stand by my firm belief that breakfast is what keeps this world together because if it wasn’t for that meal, the world would be a very, very scary place in the wee hours of dawn (but, isn’t it already?).
Let me bring you into yet again, another little known fact: 31 million Americans (that’s about 10% of the population) do not, I repeat DO NOT eat breakfast in the morning and choose to skip it entirely!
Listen guys, I’m just as fed up with cereal and oatmeal in the morning as the next person. Our first meal of the day should be the tastiest, but why do we find ourselves avoiding it? Why do we resort to dull options? Is it because we treasure sleep rather than eating or is it because a little evil elf whispers in our ears at night and tells us that our breakfast will be as tasteless as the drywall in the walls that surround us?
Whatever it may be, I am not standing for it and I’ll be damned if I grow into the prime age of 80 and regret my past breakfast choices. So without further ado, here is a list of easy, breezy, beautiful breakfast meals that will start your morning off with a bang and possibly change your outlook on life, who’s to say.

1. “Egg in a Hole”
Okay yes this sounds strange and may even make you uncomfortable but once you have egg in a hole you won’t want it any other way. My grandma used to make this and so did my mother, just so recently did I introduce Lily to it and if she’s a believer in this creation, you should be too.
2. Overnight: Chia Seed Breakfast Pudding
Don’t let the word “overnight” frighten you, this creamy, yummy bowl of gold is so delicious and fan favorite of Lily’s. Prep this bad boy overnight and then once you wake in the morning, serve it with fresh fruit or granola and throw it in a “to-go” container and you are out!

3. Quinoa Avocado Breakfast Bowl
Holy, mother of pearl. What a beautiful, colorful creation this is and me, OH-MY did this shake me to my core. Need to be energized for a long day ahead? Then get your greens, grains, and protein in from this undeniable feast. Go ahead, make your roommates jealous.
4. Blueberry Banana Baked Oatmeal
Alright, here is a twist on your boring, cardboard boxes oatmeal. This is oatmeals malicious cousin who wants to take down the bad guys. This, is your tasty version of oatmeal in bar form. Travel safe and a gooey, crunchy treat.
5. Sweet Potato, Black Bean & Egg White Breakfast Burrito
My mouth waters just thinking about this one, awfully savory and the illusion of comfort food without the guilt. Add a dash (or douse it like me) and this burrito will take you to flavortown, thank you Guy Fieri.
